Dear Sake Lovers, We cordially invite you to an exciting workshop and tasting party to explore the secrets of the traditional alcoholic drink Doburoku together with Japan's Doburoku ambassador Norie Asano and Munich Sake enthusiasts Kai, Jeanne and Kenta. Doburoku is the most original form of the Japanese national drink Sake, which hardly anyone in Germany is familiar with and which is currently experiencing a renaissance in Japan. One of the organisations responsible for this renaissance is the "Dobu-Love" association, whose ambassador Norie Asano will attend our event online from Japan to introduce this magnificent drink. But what exactly is Doburoku? Like Sake, Doburoku is made from rice and basically goes through the same production steps, but is unfiltered and naturally cloudy, and still has a lot of fermentation residues from the mash. However, the production process is rustic and much simpler than that of Sake, which makes Doburoku ideal for home brewing. Our workshop offers a unique opportunity to learn how to make Doburoku at home in any kitchen. We will go through the brewing process step by step, from choosing the kitchen utensils and ingredients to perfect fermentation. The process begins with steaming the rice and adding koji, a special type of Japanese mushroom (Aspergillus oryzae). Koji plays an important role in converting the starch contained in the rice into sugar. Koji production is followed by fermentation, during which yeast is added to convert the sugar into alcohol. After the informative part, we look forward to taste different kind of Doburoku with you, which we have imported directly from Japan to Munich for our workshop. Expect an interesting doburoku tasting with matching Japanese snacks in a relaxed atmosphere. The doburoku is from the small Konohanano brewery in Tokyo and the Tonoike family brewery in Tochigi, both of which are among the stars in the Japanese Sake scene. The limited edition brews will also be available to purchase for home consumption. To ensure that we still have room, please register by 14 March at the latest. The participation fee for the workshop, Doburoku tasting, snacks and water is 69 EUR. Kostenpflichtige Events können bis maximal 60 Stunden vor Beginn online oder per schriftlicher Mitteilung an info@aged-sake.de ohne Kosten storniert werden und die gezahlte Gebühr wird zurückerstattet, abzüglich einer Bearbeitungsgebühr von 10 Euro. Danach ist eine Stornierung nicht mehr möglich. Gebuchte Plätze können anderen Personen weitergegeben werden, wir bitte dann um Mitteilung der Namensänderungen. Paid Events can be canceled online or in writing to info@aged-sake.de free of charge up to 60 hours before the start of the event and the admission fee paid will be refunded, minus a processing fee of 10 euros. Cancellation after this time is no longer possible.
